A Happy Tuesday with deviled eggs !

Busy, busy day, but I wanted to stop by for just a chat.
I found yummy and different recipes for hard boiled eggs that I wanted to share.
Is anyone still eating hard boiled eggs?
We are.
But that's okay, as we both like them.
I have promised to make some deviled eggs however.

In their April 2012 issue, they are celebrating their 75th anniversary.

Right up front they have a flip out page with 75 delicious ways to cook eggs.
Great!
They gathered different, favorite recipes from the past 75 years.
Now, some of them totally do not appeal to me,
but lots of them did!
Here is a sample:

Egg-Bacon-Watercress Salad

Chop 8 hard boiled eggs.
Toss with 1/2 pound cooked bacon,
1 bunch watercress (chopped),
1/2 small red onion (thinly sliced)
and 1/3 cup red wine vinaigrette.

Here is one of their deviled egg recipes:

Horseradish Deviled Eggs

Cut 4 hard boiled eggs in half.
Mash the yolks with pepper
and 2 Tbsp each mayonnaise
and beet horseradish;
spoon into the whites.

Starting to think about Easter and bunny trails

Well, so far this year I have been late for
Valentine's Day
St. Patrick's Day
President's Day
and probably more that I don't even know I have missed!

So, I thought I better jump right in to Easter preparations
or it will be done and gone!!

I like to get out some of my angels for Easter.
I do a little display with them on a half table I have under a HUGE mirror.
I also have 2 areas on either side of our tv.
Since The Cat J.T. (Junior Terrorist) is gone now,
I can also put things on my round side table in the LR,
and things on my little cut out arbor/thingy in the wall by the stairs to go up.

This is a special angel my sister gave me.
She and/or the kids usually give me at least one angel for either my birthday
or Christmas. (My birthday is in December.)

It's kind of funny/ironic really.
My mom's birthday was Dec. 28.
Her entire life all of her aunts and uncles would send ONE gift
and ONE card with the message
"Happy birthday and Merry Christmas".
This really made her crazy.
Everyone else got a present/card on their birthday
and
a present/card at Christmas time.

So Grandma and Grandpa McDowell,
and later my Dad and us two girls,
would make a big deal about having a Birthday party for Mom,
and wrapping her presents in Birthday paper
and no Christmas left-overs!

Nothing could even hint 'Christmas'.

Since my birthday comes at the beginning of December,
Mom always made sure that my birthday was like that too.
I never received anything growing up that even remotely suggested
Christmas season, or the Holidays or anything like that.
We also didn't decorate for Christmas until after my Birthday.

My dear husband has continued this tradition.
He always makes it a point to go out and buy a new roll of wrapping paper for any birthday gifts he gives me.  No red and green here!!


Mom has been gone for 10 years now.
Dad has been gone for 5 years.
Now each year my Birthday celebration from my sister
has been getting more and more Christmas-like.
This year I got a beautiful black velveteen placemat with silver branches and berries embroidered on it. It came with a pretty little votive candle holder wrapped in silver branches with silver berries.
Very pretty.
Definitely Christmas decorations!!!

 I usually receive some kind of angel ornament
(for a Christmas tree)
or an angel decorated box
(for Christmas decorating)
...you get the idea!

This year she even said:
"Oh, birthday, Christmas, whatever"
when referring to my birthday presents!

I wonder if next year I will receive One birthday present
with a card that reads
"Happy Birthday and Merry Christmas"!!!


So am I really complaining?
Nope.
At this point I am just grateful that she even thinks of me enough
to get a present/card for me!
Although I suspect it is more and more the kids that remember me...
not her.
Oh well, we get what we can, don't we?

And what does this have to do with Easter????

I love the symbolism of Easter morning that is contained in a little egg.
I love the fun we have with bunnies and chicks
and colored eggs and jelly beans
and childrens' wonder at it all.
I love that beneath all of the frivolity and fun
there is a deeper, life changing meaning to it all.
Let's explore it all together in the upcoming days of
Easter Season.

Spring Flowers and more deviled egg recipes

Hi!
Today I am thinking about the last of the early blooming flowers - my daffodils, crocus, miniature Japanese iris, and hyacinths.

a beautiful daffodil cake...you can actually eat it!

Oh, and I have ONE tulip starting to peek out of its' bud today. Hooray!

I love the sweet little chipmunk holding the tulips,
and of course there is a daffodil dress for the fairy!

Why not make some more fairy wings for her?

This is one of my "crocheted" beaded bracelets.
It is actually sewn with a needle with a ridiculously small eye, and tiny seed beads. I make these when I am frustrated with a complicated pattern.
Beading is very soothing.
Alas, it is also expensive when you are a bead addict.
Just ask my husband! (Hi sweetie!)

from the Cotton Country Collection cookbook, Mrs. Sol Courtman:

Don't forget:
Always read entire recipe before starting.
Gather all ingredients before starting.

Baked Deviled Eggs for Brunch

3 cans asparagus pieces, drained
          (I would try freshly steamed asparagus instead)
12 hard cooked eggs (with or without pretty coloring on the shells!)
3 cans 2 1/2 oz. deviled ham
1 tsp dry mustard
1/2 tsp red pepper
2 tsp grated onion
6 Tbs flour
3 Cups Half and Half
2 Cups grated med. sharp Cheddar cheese
1 tsp Worcestershire sauce
1 Cup buttered bread crumbs
    (I would toast some bread, butter it, and then chop it up into little pieces)

Butter shallow casserole and place asparagus on bottom.
Slice eggs lengthwise. Remove yolks.
Mash yolks with deviled ham, dry mustard, red pepper and onions.
Stuff egg whites with mixture and place on top of asparagus.
Make white sauce:
   Using the butter, flour and Half and Half:
    melt butter, then stir in flour and gradually add Half and Half.
      (the secret here is the gradually adding and stirring constantly)

Cook about 5 minutes, stirring constantly.
Add cheese and Worcestershire sauce. Stir until melted.
Pour over eggs and asparagus. Cover with buttered bread crumbs.
Bake 400' for 20 minutes, or until brown and bubbly.

Mrs. Courtman adds that this may be made the night before, refrigerated, BUT place bread crumbs over top just before baking.
Serves 6 - 12, depending on each guest's appetite.
Yum!

Baked Stuffed Eggs:

1 dozen hard boiled eggs
2 Cups medium cream sauce (see recipe above)
1 package chipped beef, finely chopped 
1 tsp grated onion
Salt to taste
Pepper to taste
Parmesan cheese
Paprika

Devil hard boiled eggs. Use the basic deviled egg recipe from 4/26/2011 blog.
Make medium cream sauce, adding onion and finely chopped chipped beef.
Salt and pepper to taste.
Place eggs in a flat baking dish and pour sauce over them.
Sprinkle generously with Parmesan and enough Paprika for color.
Bake at 350' for 20 minutes.

Can be prepared ahead.
Makes an excellent egg dish for brunch.
Serves 6 - 8

It's a Tulip time! with deviled egg recipes

Good day!

As I wait for my first tulips to bloom, I am impatient!
Other people's tulips have bloomed.
What, did I get slow learners?

Perhaps my tulip buds will get the message and actually bloom!

Basic Deviled Egg Recipe:

1 doz Hard Boiled (Easter) eggs
1/2 Cup mayonnaise
1 Tbs yellow mustard
1 tsp white vinegar
Salt and Pepper to taste
Dash of Paprika

Here is an "Ultimate" Deviled egg recipe:

6 hard boiled eggs
1/4 Cup mayonnaise
1/2 tsp dill
2 Tbs finely chopped onion (I like to use green onions, including the green stems)
1 Tbs mustard
1/2 tsp vinegar
dash of Cayenne
Here is a sweet Danish paper doll:

Shrimp Dilled Deviled Eggs
from Land O Lakes 'Treasury of Country Recipes'

6 eggs
1/4 Cup mayonnaise
4 1/4-oz. can deveined medium shrimp, rinsed, drained
2 Tbs chopped green onions
1 Tbs chopped fresh dill weed OR 1 tsp dried dill weed
Pinch of Pepper
1 Tbs lime juice
2 tsp country-style Dijon mustard
1/4 tsp hot pepper sauce
Fresh Dill Weed for garnish

Boil eggs. I don't give directions because I live in High Altitude country, so my boiling stuff is different than 'low landers'!
Peel eggs, cut in half crosswise.

Remove egg yolks, set whites aside. Place yolks in medium bowl; mash with fork.
Add mayonnaise, shrimp, onions, dill weed fresh or dried, see ingredients list. Add pepper, lime juice, mustard and hot pepper to yolks.
Stir to blend.

Spoon about 1 Tbs egg yolk mixture into each egg white; garnish with sprig of dill weed.
Since these are cut in half crosswise, they store and travel very easily in the egg carton the eggs came in. I prefer the cardboard type carton.
Refrigerate until served.
