Easter Edible Eggs

 Welcome!

Kaleidoscope by inkspired

Our Lord has written the promise of resurrection, not in books alone, but in every leaf in springtime.

-Martin Luther

In past blogs I have shared many different Deviled Egg recipes. This year I want to focus on hard boiled egg recipes.

Many of them will have filling, like the traditional deviled eggs dish, but with a twist or decorative  addition.

Let’s have fun!

My first food fun is probably the simplest also.

Hard boiled eggs, peeled and with the very top cut off in a zigzag ‘x’ shape. Remove the yolk if desired to use in your favorite deviled egg recipe. Stuff filling back inside egg. Cut small x in the bottom and insert a green onion for the stem. Tie with raffia or ribbon.

For a bouquet, add some cherry tomato ‘flowers’. These are made similarly. Cut cherry tomatoes, insert small cube of mozzarella cheese. Add fresh parsley for the leaves’.

My next edible egg is also ridiculously easy!

Hard boil and peel eggs. Cut in half. Add 2 chocolate mini morsels and 1 sliver of carrot to make a face with eyes and a beak.

You could also sliver a piece of black olive for eyes.

This next one is a variation on a theme:

Tip: add 1/2 teaspoon baking soda to water when boiling eggs. The shells slide right off!

My next edible egg takes a little more time, but is oh so cute! Make egg baskets to nestle at each place setting, or group on a platter with kale ‘grass’.

General Directions: cut the top 1/4 to 1/3 of hard boiled and peeled egg. Set top aside for future recipes. Scoop out yolk and add to your favorite deviled egg recipe, or try one of the recipes attached to each photo. Stuff eggs with deviled egg mixture. Take either a parsley stem with no leaves, or a thin piece of green onion. Cut and bend for handle. Push into mixture to hold in handle shape. Decorate if desired with small parsley leaves or edible flowers, etc.

Next I have a couple different styles of ‘chicks’:

The photos are pretty self-explanatory.
Use a sharp knife to carve pieces from carrots.
Eyes can be peppercorns or black sesame seeds.
Make a small slit in egg to insert legs easily.

Place a combination of the two on a platter -
Adorable!

My last ‘critter’ is a plate of cute mice!
I found many different variations on a theme, but they all had the same basics.

Key Ingredient Recipes; Pinterest

Cut hard boiled and peeled eggs in half, lengthwise.
Thinly slice radishes.
Cut a small slit in egg and insert 2 radish slices for ears.
Press on black sesame seeds or peppercorns for eyes.
Insert thinly sliced chive for tail.
Additionally, press in one more peppercorn for nose.
Add fine greens or thinly sliced chives for whiskers, as desired.
You could also use shredded cilantro or parsley for whiskers.

My next few ideas are photos only.

Take away whatever idea combinations work for you, but primarily have fun!

Most of these seemed to be reposted from reposts, so I haven’t included any specific credits. Go to Pinterest and you can find several more.

This one did seem to be an original:

I just love this next idea, and I’m looking forward to trying it out at my next food gathering.

It is a combination of the French  charcuterie boards, and a Swedish  smorgasbord.

The idea is to use hard boiled eggs as a base, then add ingredients that would enhance or compliment the eggs.

You can make a themed platter - for example use foods that are traditionally ‘Greek’ such as Greek olives, pickled onions, dilled sour cream, dates, Greek yogurt, etc.

Be sure to include a variety of textures, shapes and colors to make your platter pleasing to the eye and the palate.

Have enough hard boiled eggs for 2 (that’s 4 halves) per person. If this is your main course I would even bump it up to 3 entire eggs per person.

Personally I would hold off on any spice over everything. Let the combination of ingredients flavor the eggs.

Experiment with different flavors! Some things to try could be:

Red and yellow bell peppers
Black and green olives
Soft cheeses like Brie
Other cheeses like Cream Havarti, Pepper Jack, Mozzarella or Swiss
Sweet gherkins
Fruit like oranges, lemons or strawberries
Red and green grapes
Dates and prunes (really!)
Pimento
Flavored sour cream
Tomatoes, including sun dried
Avocado
Flavored yogurt
Pine nuts or toasted sunflower seeds
Variety of crackers
Pretzels
Thin sliced meats

This is by no means a complete list!
But did it get your brain moving?

That’s it for today. I want to get this out before Easter!
‘Til next time,

What to do with all those Easter Eggs and a bit about Paraguay

Beke

I hope you have all had a wonderful Easter season.
Both Saturday and Sunday our computer went to sleep,
and wouldn't wake up!
so.....no blog.
We had some friends over yesterday for supper,
and one of them is a computer whiz,
so he was able to show Michael how to 'wake it up',
plus some other neat (according to Michael) stuff.
So, all's well today.

Welcome to my new readers from Paraguay!
It's nice to have you join us!

Iguazu Falls, Paraguay

Wow! I would love to visit these falls someday!
I bet you can't hear a thing because of the roar of the falls.
Little bits of Paraguay:
It is a landlocked country, bordered by Bolivia, Argentina and Brazil.
It is also the least populated country on the South American continent!
Paraguay is described as a perfect trip for 'outdoor lovers, adventure seekers or anyone who appreciates nature'. (www.puretravel.com)
Paraguay has a large Japanese community!

On to the Great Hard Boiled Egg Takeover Counter-Plan!

Do you have dye stains on your fingers?
Is your sink a little 'blue'?
Are your kitchen towels in the laundry room soaking in bleach?
Does your floor do the 'colored crunch' when you walk on it?
These are all danger signals for

The Great Hard Boiled Egg Takeover!!!

Best way to implement a Counter-Plan?
Get those eggs under control by
eating them

gasp!

Yeah, yeah, I've heard it all before:

If I have to eat another hard boiled egg I will explode!
Eggs again?
You know, eggs are bad for your cholesterol....

Let's face some facts:

1.You will not explode if you eat another hard boiled egg.
2.Yes, eggs, I say! And you'll eat what I put in front of you!
3. That study was disproved ages ago. Get with the program!
thanks, Snoopy, for the happy face of an egg eater...

Okay, now let's have a plan...
Here are some ways to sneak hard boiled eggs into your food,
with hardly noticing it at all.
Really!

Idea # 1:
When making your favorite tuna fish sandwich recipe, mix in 1 or 2 chopped hard boiled eggs. I also like to add a bit of chopped celery for extra crunch.

Idea #2:
Chopped hard boiled eggs are terrific when added into a macaroni salad.

Idea #3:
Don't forget your egg salad sandwiches. Add a dash of Tabasco to your recipe for a surprise little 'kick'!

Idea #4:
An egg a day in your dog's food bowl will give him a nice shiny coat for spring.
Adjust this to the size of your dog, of course. My Great Dane would LOVE 2 eggs a day...but he's not getting them because we love deviled eggs.

Idea #5:
Put out a bowl of hard boiled eggs at each meal. When they're handy, people tend to munch on them. And don't forget - they really are healthy for you!

Colored Shell Disposal Idea #1:
Did you know that crushed egg shells are a good nutrient for your garden?
I love the added suprise of multi-colored shells to make my garden pretty!
My husband would prefer a rock garden....oh well.

Colored Shell Disposal Idea #2:
I am NOT a fish tank expert, but wouldn't some of the bigger pieces of colored egg shells look pretty in the bottom of an aquarium? I would be sure to clean off all the pieces of egg innards and membranes first, of course.

'draw-a-cartoon-fish'

Well, this sinus headache is getting the best of me, so time to close.
I am meeting with my friend later so we can do some beading time.
Always so enjoyable.
We'll see if I can see the beads today!
(boo....headaches.....booo...)
