Easter Edible Eggs

In past blogs I have shared many different Deviled Egg recipes. This year I want to focus on hard boiled egg recipes.

Many of them will have filling, like the traditional deviled eggs dish, but with a twist or decorative  addition.

My first food fun is probably the simplest also.

Hard boiled eggs, peeled and with the very top cut off in a zigzag ‘x’ shape. Remove the yolk if desired to use in your favorite deviled egg recipe. Stuff filling back inside egg. Cut small x in the bottom and insert a green onion for the stem. Tie with raffia or ribbon.

For a bouquet, add some cherry tomato ‘flowers’. These are made similarly. Cut cherry tomatoes, insert small cube of mozzarella cheese. Add fresh parsley for the leaves’.

My next edible egg is also ridiculously easy!

Hard boil and peel eggs. Cut in half. Add 2 chocolate mini morsels and 1 sliver of carrot to make a face with eyes and a beak.

You could also sliver a piece of black olive for eyes.

Tip: add 1/2 teaspoon baking soda to water when boiling eggs. The shells slide right off!

My next edible egg takes a little more time, but is oh so cute! Make egg baskets to nestle at each place setting, or group on a platter with kale ‘grass’.

General Directions: cut the top 1/4 to 1/3 of hard boiled and peeled egg. Set top aside for future recipes. Scoop out yolk and add to your favorite deviled egg recipe, or try one of the recipes attached to each photo. Stuff eggs with deviled egg mixture. Take either a parsley stem with no leaves, or a thin piece of green onion. Cut and bend for handle. Push into mixture to hold in handle shape. Decorate if desired with small parsley leaves or edible flowers, etc.

Use a sharp knife to carve pieces from carrots. 
Eyes can be peppercorns or black sesame seeds.
Make a small slit in egg to insert legs easily.

My last ‘critter’ is a plate of cute mice!
I found many different variations on a theme, but they all had the same basics.

Key Ingredient Recipes; Pinterest

Cut hard boiled and peeled eggs in half, lengthwise.
Thinly slice radishes.
Cut a small slit in egg and insert 2 radish slices for ears.
Press on black sesame seeds or peppercorns for eyes.
Insert thinly sliced chive for tail.
Additionally, press in one more peppercorn for nose.
Add fine greens or thinly sliced chives for whiskers, as desired.
You could also use shredded cilantro or parsley for whiskers.

I just love this next idea, and I’m looking forward to trying it out at my next food gathering.

It is a combination of the French  charcuterie boards, and a Swedish  smorgasbord.


The idea is to use hard boiled eggs as a base, then add ingredients that would enhance or compliment the eggs.


You can make a themed platter - for example use foods that are traditionally ‘Greek’ such as Greek olives, pickled onions, dilled sour cream, dates, Greek yogurt, etc.


Be sure to include a variety of textures, shapes and colors to make your platter pleasing to the eye and the palate.


Have enough hard boiled eggs for 2 (that’s 4 halves) per person. If this is your main course I would even bump it up to 3 entire eggs per person.


Personally I would hold off on any spice over everything. Let the combination of ingredients flavor the eggs.


Experiment with different flavors! Some things to try could be:

Red and yellow bell peppers
Black and green olives
Soft cheeses like Brie
Other cheeses like Cream Havarti, Pepper Jack, Mozzarella or Swiss
Sweet gherkins 
Fruit like oranges, lemons or strawberries
Red and green grapes
Dates and prunes (really!)
Pimento 
Flavored sour cream
Tomatoes, including sun dried
Avocado
Flavored yogurt
Pine nuts or toasted sunflower seeds
Variety of crackers 
Pretzels
Thin sliced meats

This is by no means a complete list! 
But did it get your brain moving?
